Market Salsa

Spicy, mild or sweet…everyone appreciates a good salsa. I don’t think there is an easier or more delicious way to eat your fruits and veggies. Salsa can be useful in a variety of ways- in tacos, paired with meats or simply on the top of a crispy chip. If you have a food processor or hand-held chopper, the kids will love to help combine all of the colorful farm fresh ingredients. Don’t be afraid to mix and match flavors. Salsa is a simple and fun way to experiment with abundant market items. Take advantage of the vibrant options available this season and try a few new recipes for everyone to enjoy!


Spicy: Fresh Tomatillo

1 ½ pounds fresh tomatillos
½ cup chopped fresh cilantro
¼ medium white onion
1 jalapeno pepper
1 lime, juiced
Pinch of sugar
 
1. Peel, husk and halve the tomatillos. Place under the broiler cut side down until lightly chard
2. Transfer ingredients to the food processor and pulse to combine
 

Mild: Fresh Tomato
 
1 ½ pounds fresh tomatoes
½ medium red onion
1 clove garlic
½ cup chopped fresh cilantro
1 lime, juiced
 
1. Combine all ingredients into food processor and pulse until desired consistency
 

 



Sweet: Fresh Peach

2 cups fresh peaches, chopped
½ medium sweet onion
1 lime, juiced
1 clove garlic
1 TBSP fresh chopped cilantro
2 TBSP fresh jalapeno, chopped and seeded 
 
1. Combine all ingredients into food processor and pulse until desired consistency
